I do something similar to you. If final is 65, i do a run through the pattern at 50ish, then 60ish, then twice at 65. I feel like a nice even squeeze on the gasket is better than taking one bolt all the way to 65 right off the bat. I might be wrong, but it sure doesn't hurt anything the way I do it!

I am so very very very OCD, when I work on a customer's vehicle or my own, that I cannot help but check and double check and I figure, there is a reason for a torque value. If I do what has been laid out for me as a torque spec, I know I can sleep at night.
